**Please note that the drums the potato flakes are dried in are lined with mono and diglycerides (from soybean oil).  This keeps the flakes from sticking to the sides of the drum.  So while these aren't listed as ingredients, it is possible that there are traces of them in the flakes (if it was listed as an ingredient it would read "no more than .02%").  This is true, from what I understand, of all potato flakes on the market.

SHELF LIFE: 

5 gallon buckets:  25+ years unopened.  Best if used within 12 months of opening. 

Bulk Bags:  1 year - If  you want to keep these for long term storage, you will need to repackage them!!

STORAGE:  

Avoid exposure to moisture & heat, both before & after opening.  Once opened, replace the lid promptly after use (to keep the food from absorbing the moisture in the air).
